Key Lime Cheescake Bars

Ripped this recipe out of a magazine (can't remember which one) and tried it yesterday. It is really good, and much lighter and fluffier than regular cheesecake.

  • 6 squares honey graham crackers, finely crushed (you actually need about 3/4 cup crushed crumbs)
  • 3 Tbsp melted butter
  • 1 1/2 tsp sugar
  • lime gelatin package, 4 serving size
  • 3/4 c. boiling water
  • 16oz containter cottage cheese
  • 8oz package cream cheese
  • 8oz containter whipped cream topping, thawed
  1. In small bowl, combine crumbs, butter, sugar. Press into bottom of square pan (I think mine is 8 inch square). Refrigerate while making filling.
  2. In large bowl, mix water and gelatin, whisk until disolved, set aside.
  3. In blender, combine cottage cheese and cream cheese until smooth. Scrape the side a few times! Whisk 1/2 cup cheese mixture into gelatin mixture, then whisk in the rest until smooth. Fold in whipped cream topping. Spoon filling over chilled crumbs.
  4. Cover and refrigerate 8 -24 hours (I did 9hrs -it was perfect!). To serve, cut in squares.

Unless you are one of those wierd people who don't like lime or cheesecake, you will LOVE this dessert! Serve-to-guests quality!!
